The code encodes a mailto: address, optionally with a pre-filled subject and body. Scanning it opens the phone's mail app with the message already addressed, which removes the commonest reason people never get in touch: having to find your address and type it.
Keep the subject short and leave the body empty unless it needs to carry reference numbers. A long pre-filled body looks like spam and is easy to edit into nonsense.

Frequently Asked Questions
Will this work if the user has no email app?
If the device has no email app configured, the QR code may not work as expected. Most smartphones have a default email app set up.
Can I pre-fill the message?
Yes. Enter text in the Message Body field and it will appear in the email when someone scans the code.
Can an email QR code pre-fill the message body?
It can, but keep it to a line or two at most. A long pre-written body looks like spam, and some mail apps truncate it — which leaves the customer sending a half-finished message.
Do email QR codes work on desktop computers?
They open the default mail client, which is fine on a machine with one configured. On a shared or work computer nothing may happen, so print your address as text underneath as a fallback.
